Miss Audra’s Sandwich Spread
Ingredients
- ½ cup mayonnaise
- 2 tablespoons Secret Aardvark Habanero Hot Sauce
Preparation
Mix the mayonnaise and Secret Aardvark Habanero Sauce together and add to your favorite sandwich.
Secret Aardvark Habanero Kabob Marinade

- 1/2 cup yogurt
- 2 tablespoons olive oil
- 1 tablespoon chopped garlic
- 1 tsp cumin
- Generous squeeze of lemon
- 2 tablespoons Secret Aardvark Habanero Hot Sauce
Preparation
Cut beef, chicken, or lamb into 1 1/4-inch cubes. Place meat in a shallow dish. Combine yogurt, olive oil, garlic, cumin lemon juice and Secret Aardvark Habanero Hot Sauce; add to meat, and stir to coat. Cover and marinate in refrigerator at least 2 hours.
Remove meat from marinade; reserve marinade. Thread meat, onion, bell pepper, and mushrooms alternately onto skewers; brush with reserved marinade.
Coat a grill rack with cooking spray; place on grill over medium-hot coals (350° to 400°). Place kabobs on rack; grill, covered, 10 minutes or to desired degree of doneness, turning kabobs once. Serve immediately.
BBQ Chicken ala Aardvark
Ingredients
- 3 lb. chicken cut into serving pieces
- 1 bottle Secret Aardvark Sauce
- 2 tsp. salt
Preparation
- Combine ingredients and mix well.
- Marinate chicken 4-12 hours in fridge.
- Grill over med-high heat.
- Dump on more Aardvark sauce if you can handle it.
Drunken Garlic Black Bean Noodles
Ingredients
- 1/2 lb. fettuccine noodles. Cooked al dente, drained and rinsed with cold water.
- 2 tsp. vegetable oil
- 1 cup chopped vegetables
- 1 bunch of green onions, chopped
- 3/4 cup Drunken Garlic Black Bean Sauce
Preparation
- Heal oil.
- Quickly stir fry vegetables.
- Add noodles, green onions and sauce.
- Mix well.
- Cook until heated through stirring constantly.
- Serves 6.
Drunken Jerk Turkey Burgers with Papaya-Mango Salsa

- Salsa
- 2/3 cup diced peeled papaya
- 2/3 cup diced peeled mango
- ¼ cup finely chopped red bell pepper
- ¼ cup finely chopped red onion
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons fresh lime juice
- Burgers
- 1 cup finely chopped red onion
- ½ cup dry breadcrumbs
- ¼ cup finely chopped red bell pepper
- ½ cup Secret Aardvark Drunken Jerk Sauce
- 1 large egg white
- 1 pound ground turkey
- Cooking spray
- 4 (2-ounce) Kaiser rolls or hamburger buns
Preparation
To prepare salsa, combine first 6 ingredients. Let stand at room temperature at least 30 minutes.
Prepare grill to medium heat.
To prepare burgers, combine 1 cup onion and next 5 ingredients (onion through egg white), stirring well. Add turkey; mix well to combine. Divide turkey mixture into 4 equal portions, shaping each into a 1-inch-thick patty. Cover and refrigerate 20 minutes.
Lightly coat patties with cooking spray; place on a grill rack coated with cooking spray. Grill 7 minutes on each side or until done.
Cut rolls in half horizontally. Place rolls, cut sides down, on grill rack; grill 1 minute or until lightly toasted. Place 1 patty on bottom half of each roll; top with 1/2 cup salsa and top half of roll.
Drunken Jerk Wings with Raspberry Glaze

- Wings
- 2 pounds chicken wings (no tips)
- 1 cup Secret Aardvark Drunken Jerk Sauce
- Place in gallon zip lock bag, mix and marinade 4 -24 hours in refrigerator.
- Raspberry Glaze
- 2 tablespoons butter or margarine
- ½ medium-size sweet onion, diced
- ½ (18-ounce) jar raspberry preserves
- ½ cup Secret Aardvark Drunken Jerk Sauce
- 1 tablespoon olive oil
- 2 tablespoons dry red wine
- 1 ½teaspoons red wine vinegar
- 1 tablespoon lemon juice
Preparation
For raspberry glaze Melt butter in a saucepan over medium-high heat; add onion, and sauté until tender. Stir in preserves, Drunken Jerk sauce, and olive oil; cook, stirring often, 5 minutes or until preserves are melted. Stir in wine and vinegar. Bring to a boil; reduce heat, and simmer 15 minutes. Add lemon juice.
For wings Spray sheet pan with nonstick cooking spray. Pour wings on sheet pan and spread evenly. Broil on high for 15 – 20 minutes or until brown turning the wings over once. Brush wings generously with raspberry glaze and return to broiler for 5 minutes
Secret Aardvark Drunken Jerk Burgers with Orange-Chipotle Mayonnaise

- Orange-chipotle mayonnaise
- 1 cup mayonnaise
- 3 tablespoons orange juice
- 1 tablespoon minced canned chipotle chilies*
- Burgers
- 2 pounds ground beef (15% fat)
- 6 sesame-seed hamburger buns, toasted
- 1 onion, thinly sliced
- 3 tomatoes, sliced
- 6 romaine lettuce leaves
Preparation
For orange-chipotle mayonnaise Mix all ingredients in small bowl. Season to taste with salt and pepper.
For burgers
Prepare barbecue (medium-high heat). Shape ground beef into six 1/2- to 3/4-inch-thick patties; place in 13x9x2-inch glass baking dish. Pour 1/2 cup Secret Aardvark Drunken Jerk sauce over patties and turn to coat; let stand 20 minutes.
Sprinkle patties with salt and pepper. Grill to desired doneness, brushing occasionally with Secret Aardvark Drunken Jerk, about 4 minutes per side for medium.
Spread mayonnaise over cut surfaces of buns. Place burgers on bottom halves of buns. Top with onion slices, tomato slices, lettuce, and bun tops. Serve, passing Secret Aardvark Drunken Jerk sauce separately.
* Chipotle chilies canned in a spicy tomato sauce, sometimes called adobo, are available at Latin American markets, specialty foods stores, and some supermarkets.
Secret Aardvark Drunken Jerk Braised Beef with Israeli Couscous

Ingredients
- 1 pound beef stew cubes or pork loin
- 2 tablespoons flour
- 2 tablespoons vegetable oil
- 1 15 oz can diced tomatoes
- ½ cup apple sauce
- ½ cup dry red wine
- ½ cup Secret Aardvark Drunken Jerk Sauce
- Salt and pepper
- I box Israeli couscous
Preparation
Season the meat with salt and pepper. In a large enameled cast-iron casserole, heat vegetable oil until it is shimmering. Dredge the beef or pork in the flour and add to pan. Cook over moderately high heat until the meat is browned all over, about 12 minutes. Add tomatoes, apple sauce, red wine and Drunken Jerk to pan. Bring to boil and cook for 30 minutes over low heat covered. Uncover the last 10 minutes. Prepare Israeli Couscous according to directions on box. Serve Drunken Jerk Braised Beef over couscous.
Vegetarian option Prepare sauce without beef or pork. Add 2 cups diced kale or spinach to sauce. Cook as above. Cut 1 package firm tofu in 1 inch cubes. Add tofu to sauce during last 10 minutes of cooking.
