There has been lots of activity at Secret Aardvark. In addition to Whole Food’s Markets in the northwest Secret Aardvark Drunken Jerk is now available at many other stores. Look for it in New Season’s, Market of Choice, Food Front Co-ops, Food Fight Vegan Grocery, Alberta St. Co-op and at your local Secret Aardvark seller. If your store doesn’t have Drunken Jerk ask them to get it for you as we are happy to share!
We have also updated the packaging for the Drunken sauces to plastic bottles with flip top lids. The flip tops make it easy to store upside down in the fridge so you can get every last drop. We made a conscious decision to move to plastic bottles for several reasons, they are lighter than glass bottles using fewer resources when transporting and are more durable for mail order. The bottles are recyclable so please reuse or at least recycle! As always Secret Aardvark’s bottles are BPA free.

The term jerk is said to come from the word charqui, a Spanish term for jerked or dried meat, which eventually became jerky in English. Some say that the Jerk-style of cooking was first introduced to Jamaica over 300 years ago by the slaves brought to Jamaica from Africa. In other reports the Arawak Indians, the original natives of Jamaica are credited with creating Jerk. Regardless of who actually created jerk, good jerk seasoning has an unmistakable flavor that can only be attributed to Jamaican Jerk as nothing else tastes like it.
Our founder, Scott Moritz, loved the complex flavors of Jamaican Jerk seasoning. He worked for several years to develop just the right balance of thyme, allspice, scotch bonnet peppers and garlic in his recipe. The addition of rum to this marinade is what makes it “Drunken” as well as balances the flavors. This was the last sauce Scott developed for production before he lost his battle with pancreatic cancer. He had many more sauce ideas in his head and it is our loss that they will never cross our tables.
The production of this sauce was made possible by an exclusive agreement by Whole Foods Market in Washington and Oregon. Whole Foods Market began stocking Secret Aardvark Trading Company Drunken Jerk sauce in the Northwest stores in July. Drunken Jerk will only be available at the Northwest at Whole Foods Market stores until February 2010. After that we will begin to distribute Drunken Jerk to other stores outside of the Whole Foods Market family. The generous agreement by Whole Foods Market allows Secret Aardvark to ship Drunken Jerk to individuals outside of the Northwest Whole Foods Market area as well as proving it to meat counters and restaurants for use in recipes. Secret Aardvark Trading Company would like to thank Whole Foods Market. Without their generous offer we would not have been able to make this sauce available to you and to fulfill Scott’s dream.
Use this spicy jerk marinade on chicken, pork, fish, or vegetables. For best results marinate the poultry overnight with Drunken Jerk Sauce. The trick is to rub the sauce well under the skin of the chicken and marinate it with the skin intact. While seasoning beef or pork, always make shallow cuts. When using on fish rub Drunken Jerk Sauce thoroughly on the fish and let marinate for 1 – 2 hours. Marinate vegetables in sauce for 1-2 hours. A zip lock bag works great for marinating vegetables or boneless cuts of meat.September 6, 2012
Scott Barr Moritz has passed away stemming from complications due to pancreatic cancer. He will forever be remembered for his two loves: music and food. As an exceptional foodie, he co-founded Salvador Molly’s Restaurant, and went on to create the renowned Secret Aardvark Trading Company. Secret Aardvark’s fans are legion and Secret Aardvark habanero hot sauce can be found on the majority of Portland’s restaurant tables. He was the frontman for Scotland Barr & the Slow Drags. As an acclaimed singer/songwriter, he worked tirelessly at his craft developing melodies and writing lyrics, never resting until he felt they were complete.
There is no question that Scott was the heart of the company. Despite this tremendous loss we promise to continue to supply our Secret Aardvark sauces to the tables of Portland and beyond.

Secret Aardvark has become a little less of a secret. After several misfires we have arrived in cyberspace with a resounding plop! So for all of you who have been trying to track the Secret Aardvark down, here we are! Glad to meet you!
Now that you have found us here is our story. We are a small (2 ½ people) Portland Oregon operation. We started by pedaling our sauces at the Portland Farmers markets in 2004. From an original line up of ten sauces we have narrowed our product line down to two sauces and one on the way (stay tuned). We have our Drunken Garlic Black Bean Sauce, an Asian inspired spicy whiskey laced marinade, pasta and stir fry sauce and our flagship sauce, Secret Aardvark Habanero Hot Sauce. Our hot sauce is served on the tables of over 100 of Portland’s coolest food joints. Both sauces are available in many secretly ordained Portland area grocery stores (see list – no decoder ring required). We have found our way to Washington and Montana so if your favorite restaurant or grocery story doesn’t carry Secret Aardvark let them know they should and tell ‘em to contact us here. We’ll do the rest.
We love Portland! Only in Portland could we do what we do as there is no other place like it.
